I wanted to make something healthy with Mexican flavors. Shredded chicken came to mind with black beans, wild rice, and traditional garnishes. It's very windy outside and I was craving comfort food - but something healthy!

A Cloudy Morning


Woke up to a slightly cloudy morning. Actually, I found it to be a refreshing break. It's starting to warm up around the valley. I also notice the usual birds were actively exploring the feeder filled to the brim with seed. It's humorous to see the larger birds try to delicately balance on the small feeder ledge to score a bit of morning grub.

I decided to use some zucchini and yellow squash I picked up yesterday, to make an omelet. I started with a gentle twirl of olive oil in the pan and added the zucchini, squash, small broccoli florets and some chopped button mushrooms. Finishing the dish with sliced tomato, feta cheese, and some herbs. Once the bottom had set in the pan, I slipped the skillet into the oven for a nice warm broil to brown the top. I love eggs.......

I am experimenting today on a "burger bar" for my friend Heather's birthday bash. I am excited to see how it turns out. I am for sure going to try using Brisket as the meat for the beef burgers. Burgers to include: Blue Cheese Beef Burgers, Moroccan Lamb, Ultimate Veggie, and Turkey Burgers. Hawaiian sweet rolls will be used as buns. I hope I can find both flavors at Bashas'. Heather is preparing snacks and beverages, her mom is bringing dessert. I can't wait!

Foods We Ate........ in Puerto Vallarta

















Fresh Ceviche - a mix of local fish (octopus, scallop, and shrimp) cooked in lime juice and served with chips and salsa. Baja Oysters grilled slightly, served with lime wedges. Beef Carpaccio (raw beef thinly sliced) cooked over a hot rock on the table, as Derek demonstrates.
